There are few bands that have ASOIAF as a lyrical theme, but I am looking for recommendations of bands/albums that capture an atmosphere from the books. I've been listening to Summoning and Caladan Brood as background while reading and was wondering if anyone had a song that takes them to the Wall or the Red Wedding, or anywhere else in the ASOIAF universe.

also, the beginning (or first half or whatever) of varathron's mestigoth sounds a lot like the game of thrones title theme, altho' it precedes it by a few years

the band My Silent Wake has a great medieval vibe to their sound, it fits well with what you're looking for, i think

I think you'd really enjoy the album Onyx by Greek black metal band Nocternity. A couple of the songs are about Game of Thrones and the music is very enveloping atmospheric black metal which I'd imagine would fit nicely on a playlist with Summoning. It definitely brings out the medieval fantasy vibes, and the guitarist even calls himself Khal Drogo. I don't think their latest album Harps of the Ancient Temples has any GoT themed songs, but it's also worth a listen if you like the style.
