Hi all!

I love being caught by surprise by a metal song, and some of them did it by throwing an oddly awesome dance beat: I would like to know more cases of the use of this technique

Some examples on top of my head:
Melez's intro by Therion, From Beyond's harmonized solo by Enforcer, the insane intro of Chromium Sun by Virus...

um, I never would have thought of Melez as having a dance beat (plenty of "classic" metal tracks have a similar intro), so I'm not sure I get what you're after, bue here's a few:

Amorphis have a a dance music "segment" in Cares, an awesome song that also incorporates polka and death metal :D

and I always thought of Nighwish's I wish I had an angel as having an (annoying) disco beat.

Check out Aborym’s older stuff (no human intervention era). Also Blacklodge. Basically industrial black metal with techno dance parts

Check out Contrastic. They're a weird avant-gardeish grind band that incorporates elements of dance in their music. Might be for you.

Seconding Kovenant's Animatronic. But while we're on that note, why not include S.E.T.I.?

Also seconding the rec for the aforementioned Meads of Asphodel songs. This band's integrity is bulletproof. Anytime I see someone else namedrop The Meads, I'm instantly chuffed.

As far as contributions to the thread, I'll throw Carnival in Coal into the mix. Much of their music went straight into disco, and then right back around into grindcore or death metal, so there are dance-beat time signatures all over the place. "Don't be Happy, Worry", "Got raped", "Gang Bang" come to mind.
