There's a lot of famous/infamous metal songs about men murdering women, often in extremely violent ways, but are there any notable songs where the opposite is the case?

I'm sure you're gonna find it if you search long enough in the slam, bdm, goregrind, even deathcore scenes

There are plenty of classics that are ambiguous with the gender, like "Chopped In Half" by Obituary, "Hacksaw Surgery" by Guttural Slug (though the crying sample implies a female victim), and even "Eaten" by Bloodbath (both individuals were men in the true story). I'm sure you could also find plenty of Cannibal Corpse songs. Just check the songs you know about brutal murder and see if they explicitly give you a gender. If they don't, you can assume it's about murdering men.
You'll be burned and died.

Probably Castrator is the best example I can give:

"Black Angel Assassin" by Surgikill has lyrical inspiration from revenge slasher films.

"She took an Axe" by Flotsam & Jetsam about Lizzie Borden.

Gotta love the lyrics (besides the lovely, heavy '86 powerthrash).

"A young maiden with a demon in her soul,
A twisted mind with secrets to unfold.
An innocent face, a deceiving smile,
Under no suspicion, servant to Belial.

Lizzy Borden took an axe, gave her mother forty whacks,
When she saw what she had done, she gave her father forty-one.

Now before the jury with a solemn face,
These legendary murders...she left not a trace.
Lizzy found it so simple to take their lives,
Today she walks free...Axe by her side..."
And now... it might satisfy to dream eternally.

No lyrics, but the cover art of Devouring Humanity's Eradication of Living Human Shit is of a woman blowing away what I assume is a would be rapist so that could qualify.

And I don't listen to them but Venom Prison probably have a few songs that cover this too. Just from a glance I see a song about Judith and Holofernes.

Probably not the genre you want, buuuut...

I occasionally write and give up on light novels!
And I've got an actual, full-length novel finished and awaiting a publisher!
Also have a few short-story ideas cookin' in the oven.
Currently seeking a way to make money off of these things...
