Does anyone have recommendations for prog metal albums that have music that sounds very "videogame-y"? Like the type of song that would play when you're fighting a boss in a JRPG?

Machinae Supremacy is the band which first comes to mind. The Jets'n'Guns Soundtrack album was actually made for a videogame.

Not sure if this is what you looking for, but Hentai Corporation (not in the archives, amazing band though) do have some videogame-y moments, especially in they keyboards:
