Besides a couple of Paradise Lost albums here and there, I'm not too familiar with this subgenre. What are the best albums to start exploring death-doom?

The "Peaceville Three" is a good place to start. Paradise Lost, My Dying Bride and Anathema. These bands have early albums that defined the genre as we know it.

If you want to check out the more gothic side of things, then I recommend Draconinan's album called Arcane Rain Fell.

Yes, the important death doom albums certainly include the "Peaceville Three". Their style is melodic and gothic-tinged though and cannot been consider the ABC of death doom.

To get a more "global" view of the genre. I would suggest you add to your list the following bands:

-Winter (for the cold, severe sound)
-Thergothon ( for the lovecraft influence and muddy production)
-Ceremonium (for the keyboard and guitar play)
-Esoteric (for the psychedelic, experimental songwriting)
-Katatonia (for the Black metal touch)
-Saturnus (for the mellowness and melancholy)

These are all bands with a strong identity, all personal favourite of mine - speaking here of their early production that spans from 1990 to 1997, more or less. I suggest you give a listen to the first couple of full-lengths by them...

I'd consider Hooded Menace's first two albums to be modern classics of the genre. Super riffy, and less empty atmosphere.

I definitely second all of this. Peaceville Three for the bread-and-butter.

And Draconian takes the cake for me for gothic death/doom. Though, I think Turning Season Within and Sovran are at the top of my list of Draconian albums.

Examples:

Dishearten off Sovran

When I Wake off Turnign Season Within

Another death/doom band at the top of my list is Swallow the Sun. If you're in for a long ride, I'd start with their triple album: Songs from the North I, II, III. Each part showcases a different side of them:

Part I := their classic blend of death/doom, a good mix of growls and cleans but emphasis on the cleans
Spoiler: show
Rooms and Shadows

Part II := a detour into introspective folk / folk rock
Spoiler: show
66,50'N,28,40'E

Part III := their more intense and heavy side, emphasis on the growls, a bit of funeral doom side poking its head up
Spoiler: show
The Clouds Prepare for Battle

Evoken's style is a seamless melding of death and funeral doom. Plenty of great albums in their catalogue, though most people would point to Antithesis of Light or Quietus as their best.

Some recommendations that people haven't thrown around yet;

Dark Millennium - Ashore the Celestial Burden

Riffy to the max, surreal atmosphere, distinctive vocals... one of the most original doom/death metal albums out there. DOn't bother with anything else from this band, or you'll be extremely disappointed.

Riff giants Divine Eve are essential; think of early Celtic Frost meets Stockholm death metal. Upon These Ashes Scorn the World is a fantastic compliation, but you might want to chase down the first demo and EP too.

Ceremonium's No Longer Silent is one underrated gem. It's versatile stuff; both from a riff as well as an emotional point of view. Can't go wrong with this.

I'm a real sucker for good drumming in the death/doom style.
Some bands in this genre exist because the drummer wasn't good enough to play death metal, so they just played a slower version.
I agree with Colin's picks on Dark Millennium and Divine Eve.
I'd also throw Contagion's "Seclusion" demo into the mix, and Dusk's "Majestic Thou In Ruin" (both of which have proper syncopated interesting drumming and not the usual plod/blast patterms).

I think I took a chance on this in an old Relapse catalogue, and it delivered. Kind of surprised it hasn't been issued on LP, but hey, a lot of people suck at listening to music.

Coffins - The Other Side of Blasphemy (unbelievably heavy)

Sempiternal Deathreign - The Spooky Gloom

W.A.I.L. for some black metal elements & atmosphere (I prefer their 1st album)

For something from my country, Sinistrous Diabolus is the place to start.

Dusk (USA)
https://www.metal-archives.com/bands/Dusk/4881

Majestic Thou In Ruin is a quintessential album, the guitar tone is so intense!

Indesinence, from the UK:

https://www.metal-archives.com/bands/Indesinence/7567

Pure death/doom with some blast beats here and there and a light Celtic Frost touch, very guitar riff oriented band. Noctambulism is a must if you are into this style.

Mourning Beloveth:

https://www.metal-archives.com/bands/Mourning_Beloveth/3928

Death/doom heavily influenced by early My Dying Bride/Anathema, they have a pretty solid discography, but I have a soft spot for the debut "Dust".

I second Dusk and Morgion! (Dusk's newest album is killer.) Though for Morgion, I'd probably recommend Solinari over Among Majestic Ruin. Their album Cloaked By Ages... was actually my intro to the genre and while not nearly as heavy as their previous stuff, is an absolute masterpiece of an album.
