Hi, I recently submitted a local Deathcore/Metalcore band to the website and had it rejected, despite (in my opinion) it being closer to metal than core. Below is a Spotify link to two of their EP's for evidence sake.

Alex Annihilator - Not Dead, Yet (2021)
Alex Annihilator - Club 27 (2020)

If it's not eligible could I have some pointers (or just a good resource) on how to determine what is considered Metalcore and what's Metalcore.

That's mostly "core".

As for pointers for what's metal and what's core. Not sure. I'm not the biggest metalcore nerd myself, but the most obvious point of reference is Killswitch Engage or All Shall Perish, I guess.
Or as our rules state:

The riffs have to be based in metal, usually the more metal metalcore bands take their riffs from the swedish melo death sound, so if it sounds similar to that, it should make the cut. In the end it's just listening a lot and gaining experience.
